Crab Sandwiches with Herbs
1 lb. lump crabmeat 2 Tbsp. plus 2 tsp. mayonnaise 2 tsp. fresh parsley, minced 2 tsp. fresh tarragon, minced 1 Tbsp. plus 1 tsp. scallions, minced 1/4 lb. light cream cheese 2 eggs, beaten 3/4 tsp. Dijon mustard 4 English muffins, split and toasted 4 slices tomato
Combine first 5 ingredients in a bowl. Combine cream cheese, eggs, and mustard in another bowl and beat until thoroughly mixed. Spread crab mixture over English muffins. Spread cream cheese mixture on top, and broil muffins 3 minutes 6 inches from heat source. Add tomato slices and broil another 2 minutes.
